			<content:encoded><![CDATA[<p>Today I was invited to perform a cooking demonstration on KNBC&#8217;s <em>Colorado &amp; Company</em>, one of my favorite shows to visit. I was thrilled to use the opportunity to help promote the<a title="NMSS Colorado" href="http://www.curemscolorado.org" target="_blank"> National Multiple Sclerosis Society&#8217;s Colorado Chapter </a>and several upcoming efforts to raise funds and awareness for MS.</p>
<p>I selected a recipe from my current <a title="glorious one pot meals" href="http://www.gloriousonepotmeals.com" target="_blank">cookbook</a>, <em>Honey and Spice Pork</em>, because the combination of cinnamon and honey is thought to reduce inflammation, a primary issue in multiple sclerosis and other auto-immune diseases.</p>
<p>However many health benefits this recipe may offer, this recipe is mostly just a crowd-pleasing meal that offers a multitude of variations (swap out the pork for chicken or salmon&#8230; mmmm! or make it vegetarian with <a title="seitan" href="https://www.amazon.com/dp/B00015YTS8?tag=gloonepotmea-20&amp;camp=213381&amp;creative=390973&amp;linkCode=as4&amp;creativeASIN=B00015YTS8&amp;adid=1SMBF140QQTSPWT6PB40&amp;" target="_blank">seitan</a> (a wheat gluten meat-substitute product found in the refrigerated section of a health food store, near the tofu).</p>

<p><strong>Honey and Spice Pork</strong><br />
<em>Serves 2</em></p>
<p>My kids love the sweet and spicy flavors of this meal. The pork together with the potatoes, carrots, and green beans offers a kid-friendly, well-rounded dinner loaded with nutrients and low in fat. Look for boneless center-cut pork loin, 1/2-inch thick. Or substitute a turkey tenderloin, a salmon fillet, or even chicken for the pork.</p>
<p>1/2 to 3/4 pound pork tenderloin<br />
sea salt and ground black pepper<br />
1/4 cup honey<br />
3 tablespoons Dijon or Cajun/Creole-style mustard<br />
1/2 teaspoon ground ginger<br />
1/2 teaspoon ground cinnamon<br />
1/4 teaspoon ground cloves<br />
6 to 8 small new potatoes, scrubbed<br />
2 carrots, sliced in coins<br />
15 to 20 green beans, trimmed, or 2 cups frozen</p>
<p>- Preheat the oven to 450° F.<br />
-  Spray the inside of a cast iron Dutch oven and lid with canola oil.<br />
- Put the pork in the pot and lightly season with salt and pepper.<br />
-  In a small bowl, mix together the honey, mustard, ginger, cinnamon, and cloves and pour over the pork.<br />
-  Slice the potatoes in half and add to the pot, then scatter the carrots and green beans over the potatoes.<br />
-  Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.</p>

			<content:encoded><![CDATA[<p>This morning I demonstrated a quick and  easy one-pot dinner recipe for Dill Salmon to help raise awareness of multiple sclerosis and the <a title="walk ms colorado" href="http://www.walkmscolorado.org" target="_blank">Walk MS events </a>coming this month around the country. In Colorado, <a title="Land of nutrition walk ms colorado" href="http://www.effortlesseating.com/2010/04/vitamin-d-multiple-sclerosis-walk-ms-promo-video/" target="_blank">I will be hosting the &#8220;Land of Nutrition</a>&#8221; in the Wellness Tent at the Denver, Colorado Springs, and Boulder events in May.</p>
<p>Salmon is a desirable food to eat for those living with multiple sclerosis because it is full of omega-3 fatty acids to help maintain and repair the nervous system.</p>

<p><strong>Dill Salmon</strong> <em> Serves 2</em><br />
This is a great, light summer meal and is particularly great for filling your diet with omega 3s! Adding a thin coating of olive oil on top of the fish will result in a less-dense fillet. For an even richer flavor, place several pats of butter on the fish.</p>
<p>Olive oil spray<br />
2 scallions, white and green parts, chopped<br />
1/2 to 3/4 pound salmon fillet<br />
1 teaspoon olive oil<br />
Salt and freshly ground white or black pepper<br />
3 garlic cloves, thinly sliced<br />
1/2 lemon, thinly sliced<br />
5 to 7 whole dill sprigs<br />
5 or 6 red potatoes, thickly sliced<br />
2 large carrots, cut into long strips<br />
1/2 medium zucchini, cut into sticks<br />
1 celery stalk, sliced<br />
1/2 medium cucumber, cut into sticks</p>
<p>1.    Preheat the oven to 450F.<br />
2.    Spray the inside and lid of a cast iron Dutch oven with olive oil.<br />
3.    Scatter the scallions in the pot. Set the salmon on top of the scallions, skin-side down if not skinned, and drizzle with olive oil. Sprinkle with salt and pepper, followed by the garlic.<br />
4.    Top fillets with the lemon slices and half the dill sprigs. Scatter potatoes around the fish. Add the carrots, zucchini, celery, and cucumber. Tuck more dill sprigs into crevices and lightly season again with salt and white pepper.<br />
5.     Cover and bake for about 43 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.</p>

<p>Here are a few recipes that fans have told me are their favorites. I would suggest you look at the ingredients and see if they are flavors that your family likes, and then go from there.</p>
<p>Remember: everything in a GOPM is <em>substitutable</em>. That means that any protein can be substituted for any protein, any carb for any carb, and any veggie for any other veggie. Feel free to mix an match fresh and frozen ingredients within a recipe, and swap out ingredients your family doesn&#8217;t like for ones they do.</p>

<p>I wrote recently of <a title="Oxygenate cells to fight cancer" href="http://www.effortlesseating.com/2009/09/cancer-fighting-tip-oxygenate-cells/" target="_blank">oxygenating your cells as a way to make the body environment inhospitable to cancer growth</a>, and today I want to peek at how you can manage illness through diet and lifestyle changes.</p>

<p>I wished I could have fed the pomegranate glazed chicken, potatoes, squash, Brussels sprouts, and mushrooms to all 85+ audience members at the signing, but it was nevertheless gratifying to have such an attentive group asking wonderful questions about healthy eating and making Glorious One-Pot Meals. As soon as my dad shares his photos from that day I will post them here.</p>

<p>One of the questions was where do I find pomegranate molasses? I get mine at the <a title="spice shop pomegranate molasses" href="http://savoryspiceshop.com/extracts/pomolas.html" target="_blank">Savory Spice shop</a>, but I&#8217;ve seen it at middle eastern groceries and Whole Foods.
