Mexican Rice

Cooking for Kids posted a quick and easy Mexican Rice recipe based on the Glorious One-Pot Meal cooking technique.

Food writer Stephanie Gallagher took the basic concept of GOPM — using a cast iron Dutch oven inside an oven at 450F — and gave it a few tweaks such as stirring the ingredients and removing the lid to brown the cheese at the end. The result is a fun, kid-friendly meal or side dish that you can whip together in no time.
